A years-long obsession with birria, involving travels on both sides of the border to sample the region’s best renditions of the classic slow-simmered Mexican stew, have inspired local smoke shop owner Mike Touma to launch a food truck to further fuel his passion for the dish.
Mike’s Red Tacos debuts this Friday at 2335 Morena Boulevard, where the truck will be parked next to the former Old Trieste building in Bay Park every Friday from 4 p.m. until it sells out. Revolving around a birria recipe that was created in collaboration with area chefs, Touma’s menu is built around birria tacos, made with fresh tortillas from a local vendor, which are dipped in chili oil and crisped up on the flattop for their signature red color.
Mike’s Red Tacos will also serve birria mulitas, birria ramen, and the Crunchstack, a take on the Taco Bell Crunchwrap that features the birria sandwiched between two tostadas and melted cheese, all wrapped with flour tortillas and griddled with chili oil. Four homemade salsas — red, green, jalapeño, and a yellow salsa made with yellow chilis and yellow bell peppers — will be offered.
Touma says he hopes to be able to expand the food truck’s days and hours of operation, with the longer-term goal of opening a brick-and-mortar restaurant, potentially in the Bay Park area, by mid-2022.
